A former cognac distiller and chef turned artisan
Audemus was created in 2013 by Miko Abouaf - a long-time distiller from France. After working for a number of years for famous cognac distilleries including Martell and Courvoisier, Miko decided it was time to branch and pursue his own venture. Inspired by Sacred Spirits, a microdistillery from London that opened a few years earlier, he noted that it wasn’t necessary for him to have a big facility packed with copper stills to truly make an impact on the craft spirits world. He set up a vacuum distillery in his own living room and Audemus began.
Miko’s first creation was Pink Pepper Gin - an intense, aromatic gin with bold flavours and spicy notes of pink peppercorns. It is his flagship product, but not where the story ends. While the size constraints of Miko’s micro-distillery means he won’t be mass-producing anything any time soon, it also means he is free to experiment with a ton of different spirits. He varies his production methods and ingredients for each tiny batch, and produces a variety of spirits including gins, liqueurs, bitters, hybrid spirits, and pretty much anything else he feels like.
Audemus’ hand crafted spirits are born from a desire to combine modern techniques with the traditional methods refined by generations of distillers and blenders in Cognac, France. Based in the heart of the old town, Audemus innovates with artistry and esprit, making products which are proudly contemporary. In contrast to traditional copper-still distillation, Audemus uses vacuum distillation. This allows them to distill their spirits at a lower temperature and preserve the flavours of added ingredients such as botanicals or flowers.
Dialling Distinct Flavours
Miko now works in a small team with three other people including Ian, Pip, and Charlie. His distillery, however, remains his own private domain, while his tiny batches remain distinctive and personal like they’ve been since the beginning. Each micro-batch of Pink Pepper Gin produced by Audemus is dedicated to a person, or group of people, who have helped or inspired them along the way.
