Bartenders, for bartenders!
Baldoria is the brainchild of Rory, Tim, Dotan and Daniel - better known as Ernest. Most of the members of Ernest work at the Little Red Door, a renowned Parisian mixology bar. Bartenders see products come and go at a rate of knots - and often the products that arrive in their bars aren’t particularly suitable for the art of mixology. Ernest was formed from the staff’s desire to produce their own spirit - something luxurious, high-quality, and practical for the art of cocktail creation.
Ernest chose vermouth for a number of reasons: it’s a key ingredient in many classic cocktails which have recently come overwhelmingly back into style, and there aren’t a lot of good artisanal vermouths currently available. Rory, Tim, Dotan and Daniel were perfectly positioned to be aware of all the comings and goings in the spirit industry, and this was an obvious gap in the market.
Having identified their product, Ernest teamed up with Piero and Enrico at Argalà, an Italian craft distillery, to start working on the production. All of Baldoria’s vermouths are distilled by Argalà, deciding the recipes in collaboration with Ernest. Once they’ve gone through the distillation process, the end product is reworked by the people who use it. Local bartenders are consulted, and the design and branding is a collective effort.
Retaining the taste of nature
Baldoria vermouths are polished, well-balanced - and practical. Made by bartenders, for bartenders, they’re equally at home in a classic cocktail as in a contemporary mixology creation. Even if you don’t possess the expertise of the bartenders at the world-famous Little Red Door, you’ll find these vermouths easy to incorporate into your recipes. Currently available in four varieties, they have worked themselves into cocktail menus all over Paris.
