Over twenty farming and distilling partners
Mezcal Unión is a story of collaboration. Independent farmers and micro-distilleries work with the Unión on an equal basis - the Unión provides investment and training programs and is contracted to buy the distilleries’ product. The support from the Unión helps distilleries hone their craft and produce high-quality mezcal with the freedom to remain independent and grow their own businesses. The project began in 2009 when Alejandro Champion and a group of young entrepreneurs from Mexico City ventured out to learn more about the people and processes behind mezcal - a spirit that was growing in popularity.
So far, Mezcal Unión has planted over 750,000 Espadín, Tobalá and Cirial agave plants in the mountains of Oaxaca. Although agave grows slowly, the Unión is committed to using only the plants grown by their farmers. As members of the network, artisanal farmers are taught sustainable farming practices where each genetic variety of agaves is respected and preserved. These environmental differences allow each plant to bring its own personality and flavour to the finished product.
Once the agave plants are mature, it’s time for preparation. The hearts are harvested and the production begins, overseen by the independent local teams. Mezcal Unión supports their micro-distilleries through this process as well, providing training in ecological and natural practices. With their guidance, they help them create organic, high-quality spirits. The micro-distilleries then bottle, tag, and hand-pack the mezcal for distribution.
An all-natural production technique
Mezcal Unión is a unique network that allows independent farmers and distillers to receive valuable support to improve their skills and grow their businesses with the freedom to remain independent. Supporting these creators gives them the tools they need to produce high-quality spirits with natural, sustainable techniques. With a set of shared values, they all show respect for their environment, their processes and one another. With over 100 people across 9 regions in Oaxaca, the Mezcal Unión is a strong network that produces some of the best mezcal in the world.
